So yummy!
Chop up a red and an orange bell peppers a red onion and a whole pineapple. Toss with a couple tablespoons of grape seed oil salt n pepper to taste and 2 tablespoons of light brown sugar. Bake at 350 for 20-25 min. Squeeze juice of 1 lime and a handful of unsweetened shredded coconut. Serve over quinoa. YUMMY!!!
