Ahhh its nice to be making bento's again even if it is only temporary. I saw this demo recipe on you tube and just had to try it out in a bento. I was happy with the result, from such a simple recipe.
This recipe is very filling on just a few pieces of chicken so a boneless chicken breast can easily fill 3 bento's. I only used 1/3 the breast I had in my fridge to make this recipe, it is not meat heavy but the meat does add heartiness to this dish. It is more of a the mingling of the flavors between the veggies, chicken, and sauces that make it into a perfect bite!
The basic layout on how to recreate this bento is just lay a layer of rice on the bottom of the bento box, top it with sauteed cabbage, kewpie mayo, cooked chicken, and the sauce the chicken was cooked in. I added sesame seeds and green onions for pop.
