I use low fat cream cheese and and low fat thickened cream for the filling. I use normal thickened cream for the topping. I use low fat butter for the base and my favourite biscuit is the Arnotts Granita biscuit.
A friend made a variation which was using lime instead of lemon and gingernut biscuits instead of the plain ones.
