I'm trying to organize my craft room (yay, a craft room!) here at the new house, but it's like rearranging the deck chairs on the Titanic. I need to get rid of a TON of vintage clothing and fabric. I guess the best advice I can give is to just do what you think is best for yourself first, collection second. I don't know about you, but most of the stuff I ended up getting rid of, I felt better about. EXCEPT for older knitting mags, and certain sewing patterns. My advice is to never get rid of those.
As for organizing, the best I did was organize my notions first--I have a post about it from December or January, then catalogue and organize the fabrics. Everything has a home, a label, a box--and I do my absolute best to stick with that.

I'm one, too, though, and quite possibly a lot less discriminating than you. I have a terrible time deciding what I'm willing to let go because I want to feel sure I'll never regret letting it go---and I have yet not to regret letting go of at least fifty percent of the items I've donated or sold: patterns, fabric, books.... Oh, especially books!
With those, I have learned to be more careful of what I'm bringing home, because once I've had a book in my hands (and on my shelves), it'll be got away from me when it's pried from my cold, dead fingers. And of course because there's only so much space, which dilemma is confronting you right now.
So, I'm certain that I'm not the person you should ask, and I'm certainly not the person who ought to be so bold or so forward (or so silly!) as to offer you advice for it certainly wouldn't be helpful. Too much like the blind leading the blind.
