I've been doing some investigation into the variations of filled wafers to write a small pamphlet with the German recipes for both the wafers and the fillings, similar to what I have done for the funnel cakes.  It all started with Anna Wecker's entry - by far the most extensive that I translated here:

I've turned to the dictionary and Staindl's 1596 cookbook to try to make a bit more headway as to the meaning.

Bildindex is yielding nice results using the search for waffeleisen.  These beauties popped up and the look more like rosette irons than waffle/pizelle irons to me.

I think I may have too many cookbooks floating about, but in searching for more information for the "donut demo" I read these recipes with a bit of interest.  Ronzier's "Kunstbuch von mancherley essen" is dated 1598, just like Anna Wecker.
