BREAKFAST:  2 Lg Shrd Wht Bisquits
+ 2oz strawberries + 1oz blueberries
+ C Very Vanilla SILK / water / inst cof

LUNCH:
Whl Wht Tortilla (used as wrap)
onions & peppers mix + mushroom & sesame seeds stir fried
in tsp olive oil + 1 oz chickn seitan, torn into sm pieces
water

SNACK: Whole Soy & Co blueberry yogurt + handful blueberries

SNACK: 1oz mx together: cashews, walnuts, sunflwr & pumpkin seeds
small banana / 1/2C Ocean Spray Cran Grape Jc

DINNER: TACO SALAD
Proportions for 1 dish, just multiply it by however many people you are serving. The picture doesn't look half as good as it tasted!  My omni husband loved it :)


Start by cooking your soyrizo, it serves 6 (2oz each)

In large flat dish/bowl, put a base of 1oz of tortilla chips, and just mash down with your fingers until they are crushed.  The good news is, if you are at the bottom of the bag, you have something to do with all those little pieces :)

I have added a tsp of olive oil to 1/4 can of fat free refried beans, and after heating, just let little plops of it fall on top the chips here and there, kind of connecting.

Now, use 2oz (1/6 of skillet) of the soyrizo to spread over the beans & chips.

Add lettuce on top, and diced onion, if you have black sliced olives, I'm jealous, cause I was out :*(

Sprinkle with 1/2oz of Galaxy Veg Patch shreds cheddar (or whatever)

Top with T of Tofutti Better Than Sour Cream and some salsa.    I didn't use a lot of salsa, because the soyriso is HOT!  I often put cherry tomatos in that are sliced in half, but the dots of salsa fooled my eye and I didn't realize they were missig till I had eaten half of it!   Wishing I had some guacamole to plop in this, or on the side.

Don't try to eat this from the top down, instead try to get a little of each layer with each bite.  That's why you'll see me eating it with a big spoon instead of a fork, ha, ha, don't look!

It will be a weird night, I can't eat until after some test tomorrow, which isn't till 11:45am!   I'm still trying to decide if I shoud eat breakfast before going to bed so I won't get wimpy tomorrow.
