I will be baking 5 dozen cupcakes tomorrow. On my list are:

I am also going to finally make some of the fabulous Mexican Lasagna I had at Thanksgiving.

My Aunt Donna makes the best cabbage rolls ever. We get to eat them every Christmas. I wanted to try making them since all the commercially made versions are too spicy for my mom. So my cousin Sue kindly wrote down the recipe and emailed me the instructions.

Well today I only worked 12 hours (sigh) so I had time to get the ingredient I was missing that prevented me from baking yesterday. There was some kind of police roadblock on my usual route home so I turned off into an unknown neighbourhood to get around it. This was a mistake. I just made enough delicious beef stew to feed at least twenty people. The only problem is that there will only be five for dinner. I need a bigger freezer.

I didn't plant a garden this year - not even any flowers. Things were just too hectic back in May and June. Fortunately however, our lovely neighbours did. In the last week or two, we've been gifted with the bounty from their gardens: eggplants, zuchini, giant tomatos, tiny cute cherry tomatos and pears. Tonight for dinner I made a pork tenderloin wrapped in maple bacon for me and roasted rosemary chicken for Mom. This was combined with whole wheat pasta tossed with a peanut satay sauce and steamed broccoli and cauliflower. Too yummy for words! I finally got myself organized and bought a pile of lovely fresh ingredients and made two huge pots of soup - Broccoli/Cauliflower in one and Squash & Fennel in the other. I'll freeze most of it and take some to Toronto where my fridge is almost completely empty. Tomorrow, I'm making a chicken vegetable stir fry with mango chutney over jasmine rice

I just want everyone to know that minnehaha K. is entirely responsible for the vast quantities of lentil soup that I've been cooking and eating lately. If only I could get some French lentils...
