Mother's Day Brunch

I need help! Mother's Day is coming up and my mom and my aunt are coming to my house for brunch. I'm at a total loss as to what to make, although I have an idea. I just wanted some opinions and maybe some more suggestions.

I wanted to make Egg and Prosciutto Paninis (prosciutto, havarti cheese, egg, on sourdough bread), maybe some sort of roasted potatoes (my family is not into hash browns. I know that I've seen some people just do potatoes), and some sort of fruit. Also, I found this drink recipe that I thought would be a good twist instead of a mimosa; it's called a Raspberry Orange Sunrise and it's made with fresh orange juice, raspberries, and semisweet sparkling wine.

So my question is, are the paninis and potatoes too heavy for a brunch? Do you have any suggestions for the potatoes if it's not too heavy? And why kind of fruit is good this time of the year? I've seen fruit salads with fresh mint before, but I don't want to add alcohol to it, so are there any alternatives that you know of? And do you have any suggestions of what else to serve?

Sorry, for all of the questions. I've been relentlessly searching for recipes every chance I could get for the past month since I found out she was coming, but haven't had much luck beyond the drink recipe and the panini recipe.
