Hi, I am a first time poster, little while lurking before I thought i was ready to contribute my 'porn'.
Ok, so I picked up this cookbook: "Quick and Easy Recipies: Pasta and Noodles, Food Writers Favorites". It was written in the early 90's, and was a Mothers Against Drunk Driving sponsored(or perhaps sold to raise funds) book.
They have a whole chapter dedicated to Macaroni and Cheese, it is terribly terrific.
And I decided to make the 'Ultimate Macaroni and Cheese'
Here is the recipie:
-8 ounces elbow macaroni (2 cups)
-1/2 cups butter, divided.
-3 tablespoons all purpose flour
-1 teaspoon dry mustard
-3/4 teaspoon salt
-1/2 teaspoon freshly ground pepper
-2 cups milk, heated
-1 medium onion( i recommend red onion for extra bite) chopped
-2 cups shredded medium or sharp cheddar cheese(8 ounces)
-1 cup soft breadcrumbs(seasoned Italian breadcrumbs highly recommnded)
Cook Macaroni according to package directions, drain well.
-Melt 1/4 cup of the butter in a large saucepan. Stir in flour, dry mustard, salt and pepper. Cook, stirring until bubbly. Slowly whisk in milk and onion; cook, stirring , 5 minutes or until thickened. Add cheese, stir until melted. Add macaroni; mix gently. Spoon mixture into a greased 1 1/2 quart baking dish.
-Melt the remaining 1/4 cup butter in a skillet. Add bread crumbs; cook, stirring until golden brown. Sprinkle crumbs over macaroni.
Bake, uncovered, in a preheated 400 degree over for 20 minutes, or until hot and bubbly.
