SIERRA LEONIAN BANANA PANCAKES
Serves 4

3 ripe bananas, mashed
1 cup rice flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon peanut oil
1 medium egg, beaten
