On behalf of a friend who doesn't use Live Journal:

"I made a recipe that had dried raspberries in the batter. But when baked, they all rose to the top of the cupcake. That bummed me out. I wanted to batter to be all raspberry-y. So, my question is, how do you get them to not do that?"

I've never baked with dried fruit. Any suggestions?

Hi there,

I'm new here. But I've become obsessed with cupcakes in the last few weeks or so. And the need to make cupcakes was overwhelming. A friend was having a birthday get-together today and so it was the perfect excuse!

I made these for a friend of mine who adores lemon. I used the Lemon Gem Cupcake recipe from Vegan with a Vengeance but added raspberry filling. I topped them with lemon buttercream and sprinkles. They're a little messier to eat than anticipated, but still taste good!

Long time lurker, first time poster... I wanted to make some raspberry-orange-chocolate cupcakes for V-day. Since I am sick, I'm cheating and using a mix, and substituting orange juice for the water.
