I've been enjoying your lovely cupcake photos and posts for a while now - I'm very impressed.
I'm Elanor, I'm in the UK and in my 30s. I love baking of all sorts, but cupcakes are always a favourite of mine, because they're so pretty.
I've agreed to make 50-60 cupcakes for a colleague's wedding reception, and I have a question that I'm sure your expertise will help me with.
The wedding is on Saturday, the reception starts at about 2pm. I have two options: bake and ice the cakes on Thursday evening after work (tomorrow - eep!) or on Friday evening after work. Thursday would be much easier, for many reasons - I could take them to work on Friday and the bride could then take them home with her, and not have to worry about them on the morning of the wedding, I have a friend coming to stay on Friday and while she wouldn't mind me making cupcakes while she's there, I'd rather not be spending time in the kitchen... If I make the cakes on Friday night, the bride or her sister will have to come and collect them on the Saturday morning. But will the cakes keep well enough from Thursday evening (I doubt I'd finish them before 9-10pm) and early afternoon on Saturday? They would be in airtight boxes, and could be refrigerated if necessary for most of that time. I've never kept cupcakes before - they've always been eaten within a few hours!
What do you think?
