Cut roots and tough stems from 1lb young spinach. Wash, drain, blot dry w/paper towels. Tear into bite sized pieces.
Mince 6 green onions, mix w/spinach. Mash 1/2 clove of garlic, cover w/ 1T salad oil, let stand 1 hour. Discard garlic. Trickle garlic oil over spinach and let stand.
Saute 3 slices bacon until crisp. Drain, reserve bacon fat. Beat together 1 egg, 1T sugar, 1t tarragon, 1T red wine vinegar. Pour slowly into warm fat, stirring constantly until slightly thickened. Season w/ S&P. Pour over spinach mix & toss well, crumble bacon bits over each salad & serve with sliced egg yolk.
