Hearty Chicken Chili

Ingredients
1 tbsp vegetable oil
450g chicken, diced
4 tsp chili powder2 tsp ground coriander
2 tsp ground cumin
1 large onion, chopped
1 medium green pepper, chopped1 stick celery, chopped
1 can of chicken soup
180ml water
170g frozen sweetcorn
2 cans of cannellini beans, rinsed and drained
30g grated cheddar cheese

Method
Heat the oil in a large, high-sided, frying pan over medium-high heat. Add the chicken, coriander, cumin, onion and celery and cook until the chicken is cooked through and the vegetables are tender, stirring often.
Stir the soup, water, sweetcorn and beans into the pan and bring to the boil. Reduce the heat and simmer for 10 minutes, stirring occasionally.
Spoon into dishes, sprinkle with cheese and serve

Another resounding success. OMG SO GOOD. Even my mother emptied her bowl which is like freaking unheard of. Really tasty, really filling and everything soaked up so much flavour.

Of course, being as it was me cooking, I ended up throwing even more veg in. Carrots went in at the beginning with the onion and celery. Peas went in with the sweetcorn and beans.

Will definitely be making this one again. om nom nom
