Did you know that I can't find an antonym for "slut"?

I don't think you're a sushi-slut -- I just can't see you using sushi and then dropping it in the street when you're done. You've got way too much respect for sushi for that.

Which brings us to the question of whether or not you're an ethical sushi slut... But I'm not up to that one this late in the afternoon.

Perhaps "enthusiast"? I do respect my sushi. I'm always clear about my intentions (eating it), and they all know I'll be eating other sushi later. I believe ethical sushi slut is correct.
