according to the standards of the WHO, i'm apparently starving. why is it so difficult for me to eat properly? sometimes i wonder if all of my health problems aren't from just not maintaining a healthy weight

Eating one HUGE meal a day and lots of really unhealthy snacks will put weight on your bones right quick. I did that for a while and gained like 15 pounds in a month.
The usual weight-gaining regiment for guys who can't pack on mass is milk. Lots of milk. As in a gallon/day for a month. Maybe a nice big glass post-workout would help you?
