Yukito does exist and, more importantly, he has a soul. Otherwise there wouldn't be alternate versions of him in other dimensions--alternate versions of his soul.
As for Watanuki, I have come up with a wild, and seemingly random, idea as to who he truly is:

Fai shows up at the shop with a feather that he has had in his possession for at least a decade. When they go to Jade country, the feather had been there for over 300 years. Time moves vastly different in different dimensions.
As far as Watanuki being human, I never said that he wasn't, and both Sakura and Syaoran are human, each magical and powerful in their own right, but still human.
Watanuki's memories of his parents, on the other hand, I am saying that those are a spell and that, as Sakura weakens by being separated from her body, the spell is weakening also. After waking up from a dream with Sakura, Watanuki tells Doumeki that he just remembered something--that he doesn't know the names of his parents, not that he doesn't remember their names, that he doesn't know their names. Even a small child has an idea of what their parents names are, especially if they have the same family name as their parents and the age that Watanuki sees himself when he remembers his parents is definitely old enough to know his parents name

you know all this thing about Watanuki being in a dream ever since he met Sakura made me think of something. You know the chap when Watanuki visited Kohane-chan, that was after his meeting w/ Sakura right? well when Kohane-chan's mom threw the hot water at watanuki's face remember there was a lil scene where Haruka showed up and said "get out"? I always thought he meant the house or Kohane-chan but now since the whole sakura and teh dream thing got brought up you think it may refer to telling Watanuki to get out of the dream?
My theory behind this is that Watanuki is both very human and very real, as were his parents. But as it is hinted (in TRC by Syaoran-no-longer-inna-bottle) that he's going to be important later, probably as a threat to Fei Wong/Wang, Fei Wong/Wang is trying to get rid of him. Why I say this

Oh, I forgot, Syaoran also said to Watanuki "don't disappear" and was told the same thing the most recent chapter (143). So Watanuki does seem to be in danger of disappearing, but he's not like Yukito, who was burning out.
