It's autumn...

It's autumn, and that means time for more cider! Thinking of doing a regular (6-gallon) batch of cider, along with a smaller (1-gallon, probably) batch of cyser, using czar_wolfhound's recipe. Brett says "as far as I'm concerned, we should always have something brewing!" I love this man. /^|ᴥ|^\

Cyser is basically honey and apple juice blended together and fermented. Other good stuff may be added for flavor or aroma (spices, fruits, flowers, etc.)

Just finished a batch of brown ale, aged with Citra hops, which gave it nice, but subtle lemon and orange notes. 6.5% ABV, and it is daaaaaaark. Keeps a nice, creamy head, though! Did a big 12-gallon batch, aged half with Citra and half with Cascade hops. Definitely going all Citra next time, it is much crisper and more flavorful. Probably going to stick to 6-gallon batches of beer for a while though, to try lots of new things. Maybe an IPA? I have a recipe for a heather ale that I am dying to try. :D

OMG - that mug looks filled with something delicious and epic! o_o ... And a fermented blend of apple and honey seems divine. I'm a big fan of local honey, so can only imagine what good might come with such!

Yeah, I'm pretty happy with how this came out, for my first all-grain batch. The batch that was dry-hopped with Cascade has a bit of an off taste to it, which another brewer describes as "Yeah, that's the Cascade." It's still very drinkable, but it's not zomg awesome like the Citra batch. Live (and drink) and learn! ^^;
