Non-tomato Spaghetti Sauce

Roasted veggies in the appropriate colors - beets, carrots, yams, pumpkin (canned pumpkin acceptable substitute)

Puree in food processor

Saute onions and fresh garlic in olive oil, add appropriate herbs to taste (basil, oregano, pepper)

Add to food processor.

Taste, add herbs accordingly.

Alas, I cannot have the peppers, either. None of that nightshade plant for me...

I have found that adding lemon juice or ascorbic acid adds a bit of a tang to the sauce to cut some of the sweetness. (And I hadn't thought of adding pumpkin - excellent idea - I always just did beets and carrots).

These are just hot peppers (Capsicum family) - they aren't nightshades. I can't have sweet peppers either.

Ah, I was under the impression that they were all nightshades due to the alkaloids that are present.

That includes hot peppers, as well. I also can't even have paprika, cayenne, or any seasoning extracted from any pepper. Well, I CAN if I take my meds before eating them, and don't mind dealing with the achy joints and water retention for a few days.

The only one that the meds don't help with is eggplant, since that one does actually try to make me stop breathing.
