You can fully customize your character after a race change.

Not sure if this is what you mean, but when you race change, you do get the option to pick what the character looks like - it's basically like creating a whole new character, only having all of your items and level! You can even name change if you choose. :)

Yup, this. It's just like making a brand new character. Bonus yay though, cause they include the "new" hairstyles for you too, so you don't have to go to the barber when you're done if you have a non-starter hairstyle preference.

What talawolf said! If you want, you could play around in character creation before taking the plunge to make sure you can find a human look that you like.

WoW Model Viewer lets you customize each race with the faces/skin colours/other features as well as armor sets. I've done this in the past before race-changing some of my own toons. A bonus to doing this is that you can test all of the different animations and emotes too.
