Apple Tea Cake

INGREDIENTS160g butter
2 teaspoons grated lemon rind
150g (2/3 cup) caster sugar
3 eggs
1 cup self raising flour
75g (½ cup) plain flour
1/3 cup milk
I can Ardmona apple pie filling

For the glaze:
1 tablespoon water
15g butter
50g (¼ cup) caster sugar
½ teaspoon ground cinnamon

METHODGrease a 20cm cake tin and preheat the oven to 180°C.

was the filling chunky or smooth? i would be tempted to try this with apple chunks, in which cause the 150g should work. granny smith apples would hold their shape while cooking, but would be tarter (hence the 150g sugar)...just thinking...

The filling was a little chunky, but because I used apple pie filling which tends to be quite soft, the chunks mashed down a little as I stirred them through.

If you're going to use Granny Smith apples, then I agree - definitely play with the sugar level.

I think if I made this again, I'd throw in some sultanas. I like apples and sultanas together.
