INGREDIENTS160g butter
2 teaspoons grated lemon rind
150g (2/3 cup) caster sugar
3 eggs
1 cup self raising flour
75g (½ cup) plain flour
1/3 cup milk
I can Ardmona apple pie filling

For the glaze:
1 tablespoon water
15g butter
50g (¼ cup) caster sugar
½ teaspoon ground cinnamon

METHODGrease a 20cm cake tin and preheat the oven to 180°C.

Cream the butter, lemon rind and sugar with an electric beater until light and fluffy. Beat in the eggs one at a time, beating until fully combined. Stir in both the plain and self raising flour and milk. Add half the apple pie filling to the mixture and stir through.

Pour into the prepared tin. Arrange remaining apple pie filling decoratively on top of mixture.

Bake for 50 minutes.

When the cake is done, remove from the oven and un-mould onto a wire rack after about 5 minutes.

To make the cinnamon glaze: place all the ingredients together in a small saucepan and simmer over low heat for 2 minutes. Brush the warm glaze over the cake and serve.

Made this today for afternoon tea and it was delicious. The only thing I'd change would be the sugar. I think 150g of sugar is too much for my tastes (the apple pie filling was plenty sweet enough anyway).
