I need your help! I have been asked to bring a pasta salad to my family's christmas lunch (which is in one week). I have never made a pasta salad before. I rarely eat pasta salads in fact. I'd like to make something simple but really good (my uncle is a chef!), and not stodgy and traditional (not drowned in mayo or cream). But I don't know where to ( Read more... )

Yum! That salad sounds delish!

I tend not to like pasta salad, especially when they are mayo based. But I have a pretty tasty and easy salad that I invented last year, involving ravioli. You could probably make it just with penne or spirals, though.

It varies every time I make it but it goes sort of like this:

cherry or grape tomatoes - sliced in half
snow peas (and/or fresh asparagus)
fetta cheese
plenty of fresh basil and parsley
olives
cooked pasta - (I used fetta ravioli)

It's sort of like a greek salad, I guess. You could also add cucumber or corn kernels or capsicum for extra colour.

For a dressing I just had balsamic/olive oil and a little bit of seeded mustard. Ooh, and plenty of cracked pepper. :)

You know that you've had that grapefruit salad? At my house? :)

Ok, that sounds nice and fresh. I will test it out :)

Yum, just ate two bowls! I should make more salads, such a great way to eat a variety of food.

Will try out Nadia's recipe soon, just need to get a few ingredients :)

hmmm, i never make pasta salads either - i think i would go for

spiral pasta
pesto (did i post my recipe for pesto, I think i did...)
cherry tomatoes
bocconcini
pumpkin
snow peas
fresh parmesan greated on top

and if you do make it mayo based, S&W mayonnaise all the way. that is the best mayo, EVER
