I need your help! I have been asked to bring a pasta salad to my family's christmas lunch (which is in one week). I have never made a pasta salad before. I rarely eat pasta salads in fact. I'd like to make something simple but really good (my uncle is a chef!), and not stodgy and traditional (not drowned in mayo or cream). But I don't know where to start.

In anticipation of your help, here is a salad recipe for you to enjoy:

Spicy grapefruit & chicken salad
3 pink grapefruit (I used yellow, but i am a grapefruit fan), 2 leb cucumbers, 2 cups coriander, 1/2 cup mint (I have made this salad without paying attention to the amounts though), 3 cups shredded cooked chicken, 4 green onions sliced diagonally, 1 long red chilli finely sliced (I never deseed, but you may want to), 2 tbs sweet chilli, 1 1/2 tbs fish sauce, 2 tbs caster sugar, 1/4 cup chopped roasted peanuts.

Peel two grapefruit, removing all white pith. Using a sharp knife cut along membranes to remove segments. Place in large bowl. This bit is a drag, but the rest of the prep is so easy so it's worth it.
Using a vege peeler thinly slice cucumber lengthways, discard seed core. Add cucumber, coriander, mint, chicken, onion and chilli to grapefruit. Toss gently to combine.
Juice remaining grapefruit. Combine 1/4 cup grapefruit juice, sweet chilli sauce, fish sauce, and sugar in a jar. Shake to combine. This gives plenty of dressing.
Sprinkle with peanuts and serve.
