Actually, I find them way too sweet, most of the time, but one has to put all those remaining egg whites to use.

I accidentally invented a new Christmas bake yesterday too - but less successfully 😕

I followed a recipe for mincemeat shortbread, even though it looked a bit butter-heavy, and formed quite a deep layer in the size tin they suggested.

The result is not a biscuit. It has a crisp exterior, but a more solid, cake-like, interior even after going back in the oven for a long time.

We decided it tastes ok - but is definitely only for home consumption, not for gifting!
