Ahhh coconut cupcakes.....what could rival that....I will try the recipie...I may inject them with lemon curd to remind me of my wedding cake though ;) Yummy thanks for sharing! Lovely pics too.
Thank you! Hey, I remember your wedding cake! :D I think lemon curd would work beautifully with these because the only place you get the coconut flavor from is the flakes which are baked in and sprinkled on top of the icing. The nutmeg in this batter is standout, imo. ♥
Awwww! *pets* Believe me, if I could, I would give you a whole boxful. We certainly won't (and shouldn't) be able to eat the lot, so I've had to bring them to work with me...
The color grabbed me initially, but then the taste made me a fan. They're milder than many olives, milder and a little more buttery-tasting than Cerignolas, for example.
