Well, the other sushi chef freaked out and quit on tuesday. Just shy of a week earlier than his official last day. I’m pretty well done with training to be a sushi chef at this point. Now its just mastering the nuances of each fish, and speeding up and improving the consistency of my work, but the formal learning is nearly at a close. I find the whole process invigorating.
