Obviously, I'm a few days late... How did it turn out?
I have to do a low-fat, low-sodium version so my recipe is different but... I cube chicken breast and use low-sodium chicken broth in place of some of the water. Add lots of carrots, celery and onions, some Mrs. Dash No-salt Onion and Herb Seasoning, and a can of diced tomatoes. If it wasn't just for me, I'd probably add a bouillon cube or two for flavor.
Oh My God, it was Delicious!!! I was even able to make a couple loaves of bread to go with it. I used too many beans so I ended up giving about half of it to our neighbor (who is a bachelor and has said he'd pay the mortgage before eating, so you know where his priorities are...). So I'm really proud of myself, because it's the first time I've made soup that didn't come from a can (and the bread, I'm shocked it turned out as well as it did) but then I feel bad for being so proud, because it's just soup and bread you know. It's not like I cured cancer or something.
