Small cooks curry

I made my first attempt at curry today. Basic recipe. I am not mental.

An onion cut into stripes glazed on oiled pan, and I added loads of red curry paste, which started to smell Really Interesting after 2 minutes of slow fire. Which got me THINKING ABOUT SEX and consequently, I chucked in a whole pint can of coconut milk, instead of mere fourth of ( Read more... )

LOLZ @ you. I have done this exact thing with food before. I call it the "shaved haircut while trying to even things out" method.

What to do with fish sauce? Any thai recipe! A simple pad thai would be ideal. Here's a find recipe: http://www.nytimes.com/2010/04/22/dining/21minirex.html

ALSO curry soup freezes rather well if you can't eat it all now.

OMFG yes. 1/4 cup of fish sauce is just what the sad eye of badly painted Anchovy wants. Not to mention that I´ll get to call it "nam pla" :))

Hahaha, I angrily made something tonight, in fact! A vegetarian lentil sloppy joe. It didn't turn out perfectly, but FUCK IT. I should probably start posting food related things again. They make me happy. And ANGRY.

Fish sauce is used in a lot of Chinese and Japanese recipes. It's a good thing to have around! I'm glad your curry was a success!

I can't think of any offhand, honestly, because as an American Irish-Italian immigrant offspring, my go to recipes don't tend to involve fish sauce. I know I have used it before when following Chinese recipes with tasty results. I think you can substitute it for soy sauce in a lot of dishes for an interesting flavor, although sometimes recipes will ask for soy sauce as well.

I usually just let my fish sauce sit in my cupboard until the end of time, along with all the other sauces. They have fun in there.

Yes. I imagine they while away the time by speaking in tongues and playing ping pong with the E numbers.

I know what will happen. It always does. To get rid of this bottle of fish sauce, I will buy palm sugar, rice vinegar, dried flaky chillies, lemon grass and three kinds of noodles and let it all rot.

One time I bought some dill for a recipe, and used a bit of it, and then was like, "... now have mountain of extra dill" and then I had to buy some other stuff to use with the dill, and... yeah, that kind of spiraled. And I just bought some feta the other day so I fear things may recur.

But yay curry! Sounds yummy.

Yes. Yes. I just came home from work, and in my bag are thin rice noodles, wide rice noodles and A PACKET OF RICE PAPER I NEED HELP.

Rice paper is good for spring rolls, that much I learned, but I have no idea if we used fish sauce when we made those. I know a bit more what do make out of blood, kidneys and liver, but the Asian cooking is something I should learn to do.
