Slow Cooker Moroccan Beef Stew

I really want to make this stew but none of my slow cookers have timers and are non-programable.  I leave for work about ten minutes before nine in the morning.  If I cooked the main body of the recipe on low all day and then came home at five would it be ruined do you think?

Yes, crock pot recipes are forgiving. I wouldn't do the prep the night before, though. Searing the meat and then refrigerating partly cooked with the veggies doesn't sound safe.

Yep! You don't want to partially cook meat, cool it, then cook it again. It sits in the danger zone too long and can grow all sorts of bad things inside it.

I agree that it can go all day - it'll be fine. But I also agree that if you did prep the night before, keep the meat and veggies on separate dishes in the fridge.

It's a tagine. It is a dish that is very forgiving. You could even put the dried fruit in at the start and be fine.

Tagines make for great slow cooker dishes because it gets its name from the pot it is cooked in - a conical, clay, set-it-on-a-bed-of-coals sort of thing that was the progenitor of the crock pots.

You can also get the kind of timer people get for their lights when they aren't home and plug the crock pot into that. That will turn it off at the time you set. (But I agree, a few extra hours will probably be okay). Also, I regularly crock chick peas, raisins and apricots for 8-10 hours.
