I'm going to make this! I think along with some feta on top, I might throw in some kalamata olives too. ;)

Any idea how well it works with other meats? It sounds delicious but I can't have beef.

I think you could use chicken if you liked. You could even add a bunch more veg and make it vegetarian.

this may be a dumb question, but do you brown the meat first?

I did not brown the meat first. I usually only do that for whole roasts. This is already cubed, for stew. I suppose you could if you wanted to though.
