I'd chunk it and add it in just before the fro, veggies. It will be good for you!!

On second thought, if it's HUGE, you might want to only use half.

You could make zuchinni bread with the rest, or chunk and fry it with onions and garlic and add it to a spaghetti sauce (garden style).

i love zucchini and add it to most of my soups and stews. i think it tastes good, but that's me.

I add zucchini to a beef stew I make in the crock. Not the same style as yours, but I don't think that'll matter. It'll cook up just fine.

You could grate it, rather than having chunks of it. That way it would cook down, thicken the sauce a bit, and you won't know it's there.
