I found this recipe on line today and it looked so good I thought I would share it. It sounds like it would be perfect for a light summer meal. I haven't made it yet but I might later this week and if I do I'll let ya'll know how it turned out.

I make this all the time, except I don't put in the Cream cheese. It's just as good without (and healthier).

Same here, never heard of the cream cheese added(I wouldn't, don't like the stuff). I use fresh corn in summer and also add some onion and peppers for extra veggies.

I saw your link, and before I even clicked it was like "THE SPIDER AND THE MEXICAN FOOD AND THE FIESTA." Because it is right before on mine, too. I'm glad I'm not the only one.
