Your flavor might be stronger if you marinate the mest in some of the flavorings for a bit before cooking.

Agreed! Also, I find that when I give meat a very light dusting of flour and quickly pan-sear it before cooking, flavor clings to it a little better.

I may try the flour/pan sear thing first...don't remember the co-worker saying anything about that, but then again, it was five years ago.

Meat labels are not the same anymore, are they? I'm running into this problem as well!

I really, really miss the small town meat counter, where there's actually a butcher there who knows your name, has been a butcher for years and years and years, and knows EXACTLY the right piece of meat for whatever you're doing.
Big chain grocery stores/department stores don't care about the quality OR labeling things properly anymore.
