So I'm working on a project/resolution for next year I'm going to call "Bachelor Food". The thrust is this: I'm essentially a bachelor. I do have a roomie. I eat a lot of crap food and want to start eating more tasty things with spices and fresh ingredients instead of box crap like Rice a Roni and such ( Read more... )

1 small roast
2 small cans (or one large) cream of mushroom soup
1 bag of baby carrots
as many potatoes as you like
1/2 diced onion
1/2 tsp of minced garlic (can buy this in a jar)

cook on low while you're gone all day or on high for 4-5 hours if you're at home.

I don't know if this is my most nutritious recipe, but it's the one I fall back on when I need something yummy and don't have any prep time. It's the basic crock-pot bbq. Ingredients: one chuck roast, one bottle of good bbq sauce, and, if you like, onions, green peppers, etc. Put it all into the crock pot and cook on low for about 8 hours, or until the roast falls apart when you prod it. Serve on any sort of roll or bun you like, maybe with cole slaw on top. The bbq reheats nicely for sandwiches later on in the week. It's my routine no-brain-needed dinner.

1 roast
1 packet onion soup mix
1 can Coca Cola (no generic or diet)
mixed veggies and potatoes (I find fresh veggies taste better but frozen is fine, and I also like red potatoes since they are a nice small size)

layer the veggies/potatoes on the bottom, stick the roast on top, mix the coke and onion soup together in a bowl and and pour over the top, cook on low for 8-10 hours. You can thicken with cornstarch if you like at the end. Leftovers reheat well.

One of the first things I ever made in my crock pot was potatoes, chicken, cream-of-whatever, and stuffing mix mixed with a little water, layered in that order, and cooked till done. Would have been pretty good with canned corn in it, too, to make it more "healthy", and it was easy as pie.

If you use chicken breasts it's a lot easier to cook for one, I find. I'm the same about forgetting things in the fridge sometimes, so I either try to freeze leftovers pretty quickly, or just cook enough for one or two servings.

Since I was going to say brisket and it isn't that different from what everyone else is saying, I'll say my other suggestion: JOIN A DINNER COLLECTIVE!

It's way easier to get inspired by cooking if you're going to share it, and this nets you a WEEK of home made meals.
