Since my crockpot cooks hot even on low, 9+ hours would kill my meat…actually, is *has* killed my meat. I can do stroganoff for about 6 hours, shorter if I've browned it ahead of time.
Finding things that are ok to leave for that long is a problem in my own crock pot. Sounds like you have the same problem I have, though.
hmmm. After reading this post, I would really like to have a recipe for Beed Stroganoff... I know a bunch of Russians, and you would think they would have one.. I tried a few months ago, and they had no idea what I was talking about. I am quite sure that it is called something else though. Anyway, if you could also post your recipe for it I would appreciate that!!!

Even if you buy the most tough cut of meat, you should check on it. I've found that making beef stroganoff or beef stew in my oven works better than my crock. I put the it in the oven on 200 degrees for forever instead of the crock. I also end up with beef that shreds on occasion but only if I don't check the progress. Sometimes if it is done before I want to finish it I put it in a container in the fridge. The fat congeals on the top and I peal it away before finishing the recipe.
after reading the recipe i decided to make it and it was aweeeeeeesome! though i did it on the 4.5 hours on high-sooooo good. my roommates loved it too haha.
