Orange-Balsamic Chicken..

Cleaning out my freezer today I stumbled onto a huge frozen bone-in chicken breast (with skin) All by itself, taking up a lot of room. Wanted to keep it simple and easy on me while cleaning out more stuff. This will make enough for one or maybe two if you add enough sides ( Read more... )

1 huge frozen chicken breast
2 carrots roughly chopped
couple big heaping spoons of orange marmalade
few glugs of balsamic vinegarette

You cook like I do...
"A little of this, a little of that, Ohhhh, this looks good, how 'bout this - and OH! I need to get rid of THIS *dribbledrible into crock/pot/pan.."

Sounds great though...I am not a huge fan of chicke, but marmalade makes EVERYTHING bettah!

That's why I love my crock - I can rifle through my cupboards, fridge and freezer and usually find something to make. Give me some ground turkey and I'll do wonders... load me up on veggies? I'll figure out a soup or something.. I almost ditched the carrots out at the end but they added a nice touch to the texture of the sauce.
