Cleaning out my freezer today I stumbled onto a huge frozen bone-in chicken breast (with skin) All by itself, taking up a lot of room. Wanted to keep it simple and easy on me while cleaning out more stuff. This will make enough for one or maybe two if you add enough sides.
1 huge frozen chicken breast
2 carrots roughly chopped
couple big heaping spoons of orange marmalade
few glugs of balsamic vinegarette
low for 5/6 hours (since the liquid was low I turned the chicken over about half way through), remove chicken from crock, debone, remove skin and shred.. blend up carrots and remaining liquid pour over. I think I'll have this with rice and a veggie... Also think it might be good cold on a salad?
Sorry, no pictures this time.. it tastes good though and made my house smell good. And it'll be all mine, the hubby and son do not like fruit and meat mixed.
