So is the rule of thumb three colors?

It depends, some people just want to go with one (ie. sapphire, and probably white if you're wearing white) which keeps it really clean and simple, some people want to go with one main and an accent color, some want to go with two mains and an accent. If you want a rich jewel-toned wedding with lots of deep colors I'd say use blue and purple for the main colors (e.g. bridesmaid dresses) with accents of gold. (And some people just want lots of different colors). Up to you :)

I have always thought sapphire, pearl, and clear crystal (catching candlelight) was lovely.
