Jewel toned wedding: advice

So I'm starting to thing of color themes for our wedding, and I've decided that I want to incorporate a jewel-toned color scheme. And I was wondering where to begin putting together a color scheme. Where did you go? How many jewel-tone colors should I incorporate? Which ones do you think look good together?
Our only requirement: One of our colors HAS to be sapphire blue... because it's FH's favorite color.
