Unless you've baked many cheesecakes before, and have several opportunities to test and perfect the recipes you'll be using, I would highly recommend against baking your own wedding cheesecake. They can be quite fussy!
The America's test kitchen family cookbook has a great cheesecake recipe. It makes a 9 inch cake that serves 12. It is a great cookbook and totally worth buying.
With regards to making your own cheesecakes for your wedding, I would advise you to go to Sam's or Costco and buy cheesecakes there. They are delicious, affordable, and when you take into account how labor intensive cheesecake is to make and the cost of the ingredients, not to mention the space you would need to refrigerate all of them, I would say they come out ahead over making your own to serve 100. You will need to talk to the bakery a week or so in advance so they can reserve enough cakes for you. You can also ask them to make them without the little cutting lines on top.
It is definitely a bargain, and you could even return unopened ones. We had costco cheesecakes for our groom's cake. Anytime I am making cheese cake for more than just my immediate family I buy them from Costco because it is such a process to make.
I can't speak for their cheesecake, but Costco makes excellent sheet cakes (with mousse inside, yum!). I am actually getting Costco cakes for my wedding.
And, erm, I'm going to decorate them with a mighty DIY gingerbread city so that our Godzilla (Bridezilla) and Gamera (Groomera) cake toppers have a proper sort of place for rampaging. :D
I agree with the above comments. Making your own cake can actually be fairly expensive considering the tools and ingredients that go into making one, AND they are really labor intensive.

You could always order just plain cheesecakes and then decorate them.
Yep, agreed with everyone--cheesecakes can be very temperamental, even if you've baked them many times before.
If you do end up trying it, you definitely need to make them the day before. They have to set in the refrigerator overnight. But you don't want to leave them out too long on the day of the wedding, so make sure you have a refrigerator to store them in until...well, ideally until an hour or so before you serve them, just so they get to room temp.
I think Costco or Sam's sounds like a great idea. Cheap, easy, and delicious!
This recipe is super-easy, and I personally like the Neufchâtel flavor better than using regular cream cheese. (And don't even consider the jello cheesecake; it is not good, trust me.)
I would definitely make them the evening before and refrigerate them. Don't let them sit uncovered to cool too long or they will dry out.
Strawberry sauce: I take strawberries, cut into 4ths or so and covered with regular sugar. Stir gently. Let this mixture sit in the fridge and stir it gently again before drizzling over cheesecake.
Besides being the most omnomnom-able way to serve cheesecake (imho), if your cheesecake does turn out a little dry this can also help make up for that.
Oooo! That DOES sounds good. I also prefer Neufchâtel cheese. Although, I'm seriously inclined to follow the advice given in the other comments and buy some cheesecakes, I believe I'll try this recipe just for the heck of it! Thanks!
(And we're totally going to top it with strawberries of some sort. :))
