Hello WPers!
Who here has done their own wedding cakes? Or has had friends/family do the wedding cakes for them?
We're planning to make our own cheesecakes for the wedding. My sister (who's also a junior bridesmaid, she's 15) agreed to help, and we'll do a run through of the recipe beforehand to figure out any recipe confusion before we bake the official wedding cakes. But there are so many unknowns when I'm trying to plan out the time line in my head, hopefully you guys can help.
We're probably going to do about three tiers of cheesecake, and maybe different size, but I'm not sure how much could be fed off of that. We're planning on a little under 100 guests. Any idea how much cake (or specifically, cheesecake) we would need to feed everyone?
And we're getting married around 3 PM. When should we actually start prepping/baking the cakes? Should we try to do it the night before? Would they get dried out / stale / gross? I can't imagine trying to do it all in the morning, I do NOT want that on my to-do list on the day of, and I'd actually like to sleep at some point before the wedding. Any suggestions for when these should be baked and/or how to keep them fresh until we actually cut the cake.
And bonus points if you can point me in the direction of good cheesecake recipes!
