My best friend and her husband did that back in 2004. She got dropped from her parents insurance so they did a justice of the peace wedding in February and had their big wedding in May, and the May wedding is the one the celebrate as their anniversary.

Requirements depend on which state you're in. In California, you are required to have a ceremony and recite vows. Call your county.

In California, yes. All I remember is that you have to have the 'question of intent' - do you, name, take name to be your wife? worded as frilly as you want.

Man, I know this problem! I'm on heavy diet restrictions to keep my gallbladder from flaring until we can get married and I can get on his insurance.

Wow, that sucks. I was still covered under my parents' insurance for a few months after I graduated. :( Differs by state and probably insurance though.

Good luck with everything! Make sure you learn what might have to change about your "real" wedding in July too. I know people have talked about it here before and your vows might have to be different/etc since you are technically already married.

...huh, they want to remove mine, but I'm taking some stuff through my naturopath and avoiding surgery, because my health might not be able too take it...I drink tons of water and apple juice/malic acid, which is supposed to soften gall stones too (I'm not a doctor and not prescribing, but it helps me)...good luck with whatever you do! It seems like The Big Thing lately to take out everybody's gall bladder...
