I'm spending way too much money on this bridal shower with NO help from the other maids and I feel like the Bride isn't even that appreciative of it

I never buy premade veggie trays because often it's cheaper to make everything yourself. It doesn't have to be a lot, either.
Another easy, affordable option would to make sandwiches in your crockpot. One of my family favs is to get a pork roast (they're usually around 5 bucks a piece and are several pounds, so they feed plenty), and plop it in the crockpot on low for 24 hours with a can of chicken broth. Add some chopped onion, maybe some spices. Then, use two forks and shred it. It should practically fall apart. Add some BBQ sauce and wha-lah! Buns are easy, too.
Potato salad is good for this time of year as a side.
We had the crockpot shredded pork sandwiches at my sister's post-wedding brunch. They were awesome.
Something my mom always does for any gathering that everyone always loves is a basic spinach dip (you can find recipes online; they're really easy) and a storebought round loaf of like pumpernickel that can be torn up into little chunks for dipping.
If it's an afternoon shower of all women just do what they did at my shower.
-cute little sandwiches, one platter -potato salad -pasta salad -chips -mini quiche (sp?) -Cake
There were no appitizers and no one cared, as long as you serve the lunch part right away. It was the perfect amount of food. Remember women, especially those of the older generation don't eat that much.
For the shower I'm throwing, I'm going to be doing a "cookie bar". Lots and lots of cookies (I love to bake cookies, ROFL), but I'll also have fruit and veggie trays. :)
I don't know how many people you're having, but seriously. Get the mini-sandwiches. Get a veggie platter from Costco (I think it's like, $10? It's enough for about 35 people!)
Get pre-made salad. If you have a Trader Joe's in the area, they have a delicious cranberry/feta mixed salad that's SO good, it tastes homemade. Or you could just get the ingredients yourself. But salad, sandwiches, maybe some cut up fruit, and voila!
Also, I second the frozen quiches. You can get those at Costco/Sam's as well, and they're really not that expensive, and REALLY tasty!
Really easy thign to make is this yummy crab meat dip.
Get a big serving platter and spread about a CM of cream cheese on the bottom. On top of that pour a bottle of cocktail sauce. The top with shredded crab meat, imitation crab meat, or those little mini mini shrimps.
