Terry Gilliam definitely needs to be on the list, and you can see how you feel about Wim Wenders (see particularly: Until the End of the World, Faraway So Close, and Wings of Desire).
Seen Brazil, The Fisher King, 12 Monkeys, The Brothers Grimm and Tideland; own the latter and intend to own all the rest (except Brothers) at some point in the future. Any others from him you think I should see?
Well, I'd suggest Time Bandits and the Adventures of Baron Munchausen, though a lot of people hate the latter; also, if you've seen so many, you might enjoy Lost in La Mancha, the documentary about how his Don Quixote movie failed to get made.

i don't know how you feel about pretentious french movies, but i would very highly recommend... (names followed by movies i know are good)...
Claire Denis (beau travail, nenette et boni, i can't sleep, friday night)

Eric Rohmer (chloe in the afternoon, claire's knee, pauline at the beach) - his movies from the seventies are awesome. i've only seen a few of his post-seventies movies and they're good, though not as good, i think.
also worth looking into is...
Catherine Breillat (brief crossing, romance x, fat girl) - she's known for her provocative, difficult movies about women and sex. i have mixed feelings about her, but she's certainly worth looking into.

Errol Morris (Mr. Death, The Fog of War) - i've only seen those two but everyone says his other movies are amazing

Damn! Can't believe I forgot to include Altman! I love '70s cinema, and MASH is an all-time favorite (I've a soft spot for war movies). Excellent suggestions. I actually have Fat Girl in my Netflix queue, and ericbodwell recently tried to get me to watch Romance X with him - though, given his quick-capsule review, I don't know I missed much. ;)
oh yeah someone whom i've never seen any movies by but have been meaning to is Andrei Tarkovsky, director of Solyaris, Andrei Rublyov, and Stalker, among others. i also want to see more David Cronenberg - i've only seen Videodrome (which is amazing), The Dead Zone (meh...) and A History of Violence (which got huge critical acclaim but i thought it was dumb). i want to see Crash, Scanners, and The Brood.
