I've been to New Orleans three times and yet I still have a ways to go if I want to do all the things you have already done there! I stay at the Hotel Mazarin on Bienville around the corner from Bourbon Street, and mostly I just spend my NOLA time meandering around the French Quarter having unplanned adventures -- that covers the part of your list that says "roam the French Quarter on foot to see what's out there". I''ve done Café du Monde for beignets and I've had many a muffaletta.
Two of my fave unplanned adventures there: the Insectarium; the Absinthe Bar in Pirate's Alley.
Favorite sweet there: the Cajun Bark (white chocolate, Macadamia nuts, and hot spices) at Laura's Candies.
Two amusing moments when I was cosplaying a Mountie in Jackson Square: some Canadian tourists took video selfies with me while we all sang "O Canada"; a guy cosplaying Captain Jack Sparrow came up to me and said "Canada! Is that your super power or your weakness...."
I didn't mention that I and two tourists from California I met up with on the Haunted French Quarter walked the length of Bourbon Street one night, sampling some of the bars and one bad strip club. Since I don't drink, it's not high on my list of things to do for a next time. Those two tourists were stunned by how well I knew where things were in the French Quarter in two days because Californians don't walk!
I don't know if things might've changed there much since I last stayed there in 2001, but Olivier House Hotel was crammed with character and staffed by really nice people.
My first New Orleans visit in 1999 was a failure in planning and execution so I was determined that in my next I would do all the things.
I enjoyed really fresh pralines but not as much after they'd been sitting around awhile.
I didn't happen upon either of those unplanned adventures in my time there, and it sounds like fun in Jackson Square.
Them: "You haven't been here long, so how do you know where all this stuff is?" Me: "I walk."
I was also the one to suggest where to have dinner because I remembered the name and location of a restaurant we passed during the Haunted tour. They hadn't noticed it at all.
During my time there, a few random people asked me for directions.
