Finally made a real dinner from a cookbook tonight for the first time in ages and it was delicious! It's from the book Hot and Spicy and Meatless. I was hoping it would be somewhat hotter but it was still very flavorful. One thing if any of you want to make it--lentils apparently expand A TON when you cook them so I ended up with like 3 cups too ( Read more... )

you could freeze your cooked lentils in separate servings that you could add to different recipes like soups, rice and whatnot.

you can make a side dish

1 cup cooked lentils
1 can corn
1/2 cup Italian-style salad dressing
1 small onion, chopped
1 large ripe tomato, chopped
1 teaspoon hot pepper sauce
2 teaspoons chopped fresh cilantro
1 teaspoon chili powder
1/2 teaspoon ground black pepper

mix it up in a bowl, refrigerate at least 30 minutes before service.

MMm, Dhal Palak. Also good with split peas. The way my husband makes it, we also use spinach. I would also recommend kale if you'd rather have that than spinach.

If you want other lentil recipes, I'd look into a sausage-lentil stew, but without the sausage (easy enough to do). I have another one somewhere that takes less time to make, though. I'll try to post it soon if I remember.
