Finally made a real dinner from a cookbook tonight for the first time in ages and it was delicious! It's from the book Hot and Spicy and Meatless. I was hoping it would be somewhat hotter but it was still very flavorful. One thing if any of you want to make it--lentils apparently expand A TON when you cook them so I ended up with like 3 cups too

Lentls, wild rice,can of corn (drained), red pepper, tomato, green onion, cilantro, feta, and we use a bit of kraft Greek feta and oregano dressing. (I think that's what it's called) or any other vinagrette you like.
