I made these black bean pineapple enchiladas for dinner tonight. I made two changes. I didn't use the cilantro and I used corn tortillas instead of whole wheat tortillas. I heated them in a pan without oil and then added the filling as listed in the recipe in the link. I used sour cream, chopped tomatoes and sliced avocado on top and paired it

It was really good, and the pineapple totally worked with the black beans, cheese, and enchilada sauce. I've had salad before with black beans and pineapple together and liked it enough to Google for it as enchiladas and got lucky.
