I made these black bean pineapple enchiladas for dinner tonight. I made two changes. I didn't use the cilantro and I used corn tortillas instead of whole wheat tortillas. I heated them in a pan without oil and then added the filling as listed in the recipe in the link. I used sour cream, chopped tomatoes and sliced avocado on top and paired it with some refried beans and Mexican rice that I made. Yumbo.
